My oldest son recently got married in a very private intimate elopement ceremony. There were just seven of us in attendance, and one of them was the photographer! They celebrated the next day with a reception, complete with a beautiful traditional wedding cake, but for the elopement ceremony, the bride requested a Brie cake tower. I had never seen anything like it before, but I loved the idea and I'm sharing with you how I quickly and easily put together this showstopper. A Brie cake tower is fancy enough for a wedding, and fun enough for any celebration. Imagine taking your charcuterie board to the next level with a beautiful Brie cake tower!
Brie Cheese Cake Tower
Making a Brie cake tower is one of the easiest things you could do with cheese. It literally consists of stacking a few cheese wheels on top of one another.
Cheese Wheels
You can buy several different kinds of cheese in wheels. Brie was easy to get ahold of and that was what was requested. Though, if you make a cheese cake tower, keep in mind that you have options.
The key to making a cheese cake tower is stacking different-sized cheese wheels on top of one another.
I was able to find the larger size Brie at Costco and the smaller-sized Brie at our local grocery store.
Since this was for a wedding, I stressed over this for much longer than I should have. I practiced at home, so I was ready to put it together at the venue location quickly and easily.
I started by layering the Brie cheese wheels {I left the covering on during practice!}, added the raspberries and decided how I wanted to arrange them. I added a few strawberries for some height and then topped it all off with fresh rosemary.
Decorations
The fun part is the decorating, isn't it? There are so many different options you could use!
- Fresh seasonal fruit like raspberries, strawberries, blackberries, figs, and pomegranates
- Edible flowers like hibiscus, lavender, pansies, and violets
- Make salami rosettes
- Fresh herbs like rosemary, chives, basil or tarragon
- unsalted nuts like pecan, almond and walnuts
The key is adding your Brie cheese cake tower to a beautiful stand if you are serving it individually. Or stack it around the rest of your charcuterie items if you are serving it as part of an appetizer board.
Cut into your Brie {or other} cheese cake tower like you would cut into a wedding cake.
Serve it with crusty bread or crackers and enjoy!
