Ingredients:
- 2 tablespoons olive oil, divided
- 2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
- Salt and black pepper, to taste
- 1 small onion, cut into 1-inch pieces
- 1 red bell pepper, seeded and cut into 1-inch pieces
- 2 cups broccoli florets
- 1 clove garlic, minced
- 1 (20 ounce) can pineapple chunks in juice, juice reserved
- ¼ teaspoon minced ginger
- ¼ cup liquid aminos or soy sauce
- ⅓ cup chicken broth
- ⅓ cup gluten-free hoisin sauce
- ¼ cup brown sugar
- 2 teaspoons cornstarch

- To the skillet, add the remaining oil. Then add the onion, bell pepper, and broccoli. Cook for 5 to 8 minutes or until the vegetables begin to soften slightly. Stir in the garlic.
