STARBUCKS COPYCAT {BUT BETTER} EGG WHITE BITES
Makes 5 Egg Bites! YUM!
INGREDIENTS:
6 Egg Whites
1/2 tbsp Greek Yogurt
1 tbsp Green Onion {finely diced}
3 tbsp Red Bell Pepper {finely diced & sauteed}
1 tbsp Spinach {finely chopped}
1 1/2 tbsp Monterrey Cheese {freshly shredded}
1 tbsp Feta Cheese {finely crumbled}
1/4 tsp Hot Sauce
Salt & Pepper
Other things you will need:
INSTRUCTIONS:
Preheat your oven to 300F. Butter or grease each ramekin and place them in a baking pan.
Boil approximately 4 cups of water. You can do this in the microwave if you want to speed up this process.
Whisk together Egg Whites and Greek Yogurt.
Add Green Onion, Red Bell Pepper {make sure to let your veggies cool after sauteing - we don’t want to scramble our eggs before they are in the oven}, Spinach, Monterrey Cheese, Feta Cheese, Hot Sauce, and Salt & Pepper. Stir everything together well.
Pour approximately 1/3 cup of egg mixture into each ramekin.
Pour boiling water into baking pan, surrounding the ramekins and reaching approximately halfway up the sides.
Bake for approximately 34 minutes.
Remove pan from oven. Remove ramekins from pan.
Egg bites should slide out of ramekins easily. Serve immediately or freeze in an airtight container.
If you don't eat them right away, you can microwave them for 30 seconds from the refrigerator or 1 1/2-2 minutes from frozen.
Enjoy! This is a great high protein meal that isn't difficult to make and that you can eat quickly on the go during the week.

How many is a serving?
The recipe makes 5 bites, though a serving size is 1 of them. They are pretty good sized and will fill you up!
I made them and they were so delicious. Had to improvise on a few things but it still worked. Thanks for the copycat recipe.
