Loaded Sweet Potato Bites

Did Thanksgiving catch any of you by surprise? It seemed to sneak right up on us and now once that holiday comes and goes, it starts the flow of non-stop parties and events until well after the new year. I'm often asked to bring an appetizer either to meals or to a gathering, so I put together this appetizer of loaded sweet potato bites. They are the perfect mouthful of yummy goodness. Make these for game day, Christmas day, or any day because they are just that good!

Loaded Sweet Potato Bites

Ingredients

1 Cup cooked diced sweet potatoes
1/2 Cup oil
1/4 Cup milk
1/4 Cup chopped red onion
1/8 Cup crushed walnuts
1 Tbsp rosemary
1 Tbsp thyme
1 Tsp salt
1 Tsp pepper
1 Cup toasted bread crumbs

Directions
Mash the sweet potatoes.
Slowly pour in the milk and keep mashing until smooth.
Keep the mixture thick. Do not let it get watery.
Add in the onions, walnuts and all of the spices and mix together.

With a spoon, scoop out the potatoes and shape them into one-inch balls. You can also use a cookie scoop like this. They are perfect for making meatballs, cookies, and of course, these loaded sweet potato bites.

Add bread crumbs to help with keeping it together.
Lay potato balls out on a baking tray.

Place in the oven uncovered to warm them up.

Take out of oven and insert toothpicks into the center.

Serve and enjoy.

You can add 1/4 cup of caramelized carrots to combine well with the sweetness of the potato. Feel free to leave out the walnuts if you have concerns about a nut allergy.

This looks like a delightful appetizer! I am going to try them with butternut squash and see how they come out. For those of us "Weight Watchers", it will lower the point count and have the same taste.

I like cooking and experimenting with new recipes. My kids love to snack in the middle of the day when they first come back from school. I think it fits
