I'm sharing one of our family favorites today, Mojito lime chicken served with a black bean salsa. I always make extra chicken because it's fabulous the next day cut up and served on top of a bed of lettuce. Two meals in one is always my favorite!
Mojito Lime Chicken with Black Bean Salsa
2-3 pounds of Foster Farms Simply Raised chickenMojito lime package seasoning mixed with:
1/4 cup oil
2 tbsp. water
2 tbsp. apple cider vinegar
Marinate chicken for at least one hour and then grill. I always like to grill a few ears of corn at the same time too.
While you are marinating your chicken, prepare your black bean salsa.
Black Bean Salsa
2 cups chopped tomatoes
1 small onion chopped
4 tbsp. fresh cilantro chopped
2 cloves of garlic, minced
1 tbsp. olive oil
2 tbsp. fresh squeezed lime juice
1 tbsp. red wine vinegar
1 tsp. of Tabasco sauce
1 15 ounce can black beans drained and rinsed
Mix all of the ingredients together and refrigerate until you are ready to use.
This meal looks like it took hours to prepare, but my actual time in the kitchen is less than a half an hour!
You can slice the grilled corn and add it to your black bean salsa or eat it fresh from the cob.
Any leftover chicken can be cut into smaller pieces and served over a bed of lettuce for lunch or dinner the next day. As the black bean salsa sits overnight, there is a fabulous juice that comes from it and makes the perfect dressing. Add the black bean salsa to the top of the salad and pour some of the salsa juice on top for the perfect, refreshing Mojito lime chicken and black bean salad.

Looks like a delicious recipe -- except for the cilantro. Since your recipe is called "Mojito" - could I substitute MINT for the cilantro???
In spite of the terrific health benefits of cilantro, I have to say NO to CILANTRO because I'm part of the 10-20% of the population with the "cilantro gene" that makes cilantro taste like SOAP. Seriously, for those of us with the gene, cilantro ruins a recipe making the food taste like you've poured dish-washing liquid all over it -- only it tastes worse. YUK!!!
Wish cooks would offer suggestions for cilantro substitutes when they develop recipes. Thanks, Rachel
You can absolutely leave out the cilantro all together or substitute mint. What a great suggestion. I love cilantro, but I know not every does and I had heard that it takes like soap. So disappointing, because it's so delicious! Regardless, you can enjoy this recipe without and I promise, it will still taste awesome! But don't take my word for it. Give it a shot!
